Prune Cake and Frosting
- 1½ cup sugar
- 2¼ blocks butter
- 3 eggs, save 2 whites for frosting
- 3 cups cake flour, sifted
- ¼ tsp. salt
- 3 tsp. soda
- ½ tsp. cloves
- 1 tsp. nutmeg
- ½ tsp. mace
- 1½ tsp. cinnamon
- 1¼ cup prune juice (if not enough add buttermilk)
- 1½ cup mashed cooked prunes
Cream butter and sugar, add eggs and beat well. Sift all dry ingredients two times then add alternately to the creamed mixture with the prune juice. Fold in mashed prunes. Bake in 2 oiled and wax-papered 8 inch square pans in a 350 degrees oven 35 to 40 minutes. When cooled frost with your favorite icing or with the following prune frosting.
Frosting:
Combine:
- 1 cup firmly packed light brown sugar
- ½ cup corn syrup
- 2 egg whites
- ¼ cup prune juice
- 2 tsp. lemon juice
- ¼ tsp. salt
Put in double boiler over boiling water, beating constantly until of right consistency to spread. Add ¼ cup prune pulp and ¼ cup chopped nuts.
