Pork Hash with Long Rice Soup
- 1 lb. pork hash
- 1 sm. slice ginger
- 1 pc. takenoko, cut in thin slices
- 6 pcs. dried mushrooms, soaked in water and cut in thin slices
- 1 carrot, cut in slivers
- 2 cans chicken broth
- 3 cans water
- 1 bundle long rice, soaked in hot water, drained
- 1 bunch mustard cabbage, parboiled
Brown pork hash with ginger. Add chicken broth, takenoko, mushrooms. Boil for 15 minutes. Add carrots. Skim off fat. When cooked add long rice. Salt to taste.
Just before serving add mustard cabbage. Add more water if needed.
