Jiffy Mince Coffee Cake

- 2 c. flour
- 1/2 c. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
Sift all ingredients together. Cut in 1/3 c. shortening until mixture resembles coarse meal. Combine 1 egg, 1/2 c. milk (dry milk and water may be used), 3/4 c. moist mincemeat. Add liquid to dry ingredients and mix only until all the flour is dampened and a batter is formed. 1/2 c. walnuts may be added.
Turn into a well-greased layer pan. Bake in moderate oven (350-375 degrees) for 30-35 minutes. Test with a toothpick. Cake will be moist-textured. Frost thinly with powdered sugar and lemon juice mixture while still warm. I often stick the tines of a fork down through the cake so that there is only a glaze layer left on top. Serve warm with coffee. It is also tasty served cold.
