Mango Upside-Down Cake #2

  • 2 cups sliced ripe mangoes
  • 2 tbsp. lemon or lime juice
  • 1 tbsp. margarine
  • 1/3 cup brown sugar
  • 1/4 cup fat
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1-1/4 cup flour
  • 2 tsp. baking powder

Add lemon or lime juice to sliced mangos. Melt margarine in 8-inch cake pan, add brown sugar. Place sliced mangoes over margarine and brown sugar.

Cream fat, add sugar, and mix thoroughly. Add well-beaten egg. Sift dry ingredients and add alternately with the milk. Pour batter over mangoes. Bake about 1 hour at 375 degrees. Remove from oven when cake is done, turn it upside down. Serve warm. May be served with whipped cream.
