Jellied Apricot Salad

 

1 pkg. lemon or orange jello

1-3/4 cups hot water

2 tbsp. sugar

2 tbsp. lemon juice

Cottage cheese or cream cheese

1 to 2 cups sliced fresh apricots

1 cup cubed cantaloupes

1/2 cup sliced celery

Apricot halves

Dissolve gelatin in hot water, add sugar and lemon juice. Chill. When mixture is slightly thickened add slice apricots, cantaloupes and celery. Pour into a ring mold. Chill until firm. Unmold on crisp lettuce and around the mold arrange apricot halves with cottage or cream cheese. Serve with mayonnaise.
