Stuffed Shrimp
2 lbs. shrimps
3/4 lb. smoked ham chopped fine
3 celery stalks
6 tbsp. flour
6 green onions
1 tbsp. salt
dash of pepper
3 eggs
1/4 cup cream
1 carrot
1/4 lb. Chinese Peas or beans
1/4 cup water
Soak shrimps in warm water 15 minutes. Clean and prepare shrimps. Measure flour into bowl, add eggs, then add salt, pepper, cream and a little water. Add ham to batter, mix, then add green onions, celery, green peas, carrots and shrimps. Drop by tbsp. in deep oil and fry till brown on both sides. Oyster sauce may be used over and serve.
