Guava Muffins
2 cups all purpose flour - sifted
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1/2 cup shortening
1 cup sugar
3 eggs
1/2 cup guava pulp
1/4 cup coffee
1/2 cup milk
Sift together group of dry ingredients. Cream together the second group then add sifted dry ingredients alternately with liquid in the third group. Bake at 325 for 30 minutes. Makes 18 muffins.
Add 1/2 cup chopped nuts or raisins - optional.
