Passion Fruit Muffins

 

2 cups sifted flour
1 tbsp. baking powder
1/4 cup sugar
1/4 tsp. salt
2 eggs
1 cup milk
1/4 cup melted shortening
1/2 cup passion fruit jelly

Sift dry ingredients into beaten eggs to which the milk has been added. Add shortening and jelly and cut in with pastry blender. Then mix with blender until flour is moistened. Bake in 400 F. oven for 20 minutes. Rather than adding the jelly to the batter, pour muffin cups half full of batter. Place a teaspoonful of jelly in center, add more batter to fill 2/3 full and bake.
