Pineapple Chutney

 

2 oz. pepper
1 oz. garlic
3 lbs. pineapple
2 tbsp. ginger
1 tbsp. salt
1-1/2 lb. brown sugar
1/2 pt. vinegar
1/2 lb. raisins
1/2 lb. almonds

Cook pineapple, vinegar and salt. Chop nuts, raisin, garlic and pepper fine and add to pineapple. As the pineapple is juicy it requires boiling down.
