Easy Local-Style Chili

 

10 lb. ground beef
3 (7 oz.) pkg. Portuguese sausage, sliced
3 onions, chopped
2 stalks celery, chopped
10 (1.25 oz.) pkg. chili seasoning mix
4 tsp. cumin
1 Tbsp. brown sugar
4 (20 oz.) cans stewed tomatoes
5 (6 oz.) cans tomato paste
8 (15 oz.) cans kidney beans
2 Tbsp. salt

In a large sauce pot, brown beef lightly. Add sausage and brown. Add onions and celery; cook about 5 minutes. Stir in seasoning mix, salt, cumin, and brown sugar. Add stewed tomatoes, tomato paste, and liquid from beans. Bring to a boil; lower heat and simmer for 10 minutes. Stir in beans and simmer for 10 more minutes. Makes 50 (1 cup) servings.
