Vegetable Soup (Portuguese Soup)

 

1-1/2 cups uncooked red beans
1 linguesa or soup bone
1 medium-sized cabbage (chopped)
1 carrot (diced)
2 potatoes (diced)
1 sweet potato (diced)
1/3 bunch watercress (chopped)
1 8-oz. can tomato sauce
Salt to taste

Soak beans overnight in water or wash and soak beans for 1-1/2 hour in 1 cup boiling water and enough cold water to cover. Cover with lid so steam will form to soften beans. Cook beans until soft, about 1/2 hour, then add linguesa and cook for another half hour. Add chopped cabbage, carrot, potatoes and bring to a boil; then turn down to simmer. Cook until vegetables are done. Then add watercress and tomato sauce. Salt to taste. Serve with rice or bread.
