7 Day Prune Cake
1-1/2 cups granulated sugar
1-1/2 cups cooked prunes
3/4 cup shortening
3 eggs, beaten
2-3/4 cups all-purpose flour
1/2 tsp. salt
1 tsp. mace
1 tsp. cinnamon
1-1/2 tsp. soda
3/4 cup boiling coffee
Cream sugar and shortening, add beaten eggs and mix; add prunes. Sift together flour, salt, spices and 1/2 tsp. soda and add to prune mixture. Add coffee in which remaining soda has been dissolved, beat well.
Pour in 3 well greased layer cake pan and bake at 375° for 35 minutes.
This cake gathers moisture and will keep a full week without loss of flavor.
