Coconut Layer Cake (1st Prize County Fair)

 

1/2 cup butter or margarine
2-1/4 cup flour
2-1/2 tsp. double action
baking powder
1 tsp. salt
1-1/2 cups sugar
3/4 cup milk plus 2 tbsp. milk
2 eggs
1 tsp. vanilla

Cream butter until soft with mixer. Add sifted dry ingredients; add 3/4 cup milk. Beat 2 minutes at low speed. Add 2 unbeaten eggs. Add remaining milk. Beat 1 minute longer. Pour batter in layer pans. Bake 20 minutes at 375 F. When cool spread cream filling between layers. Frost with boiled or 7-minute or marshmallow frosting. Sprinkle with grated coconut.
