Meat Extender Loaf With Mashed Potato Covering

 

l lb. veal, ground )
1/2 lb. pork, ground ) or 2-1/4 lbs. veal, ground
3/4 lb. beef, ground )

1/2 tsp. powdered sage
1-1/2 tsp. salt
1/2 tsp. pepper
1/4 cup chopped onion
1/2 cup soft bread crumbs or oatmeal
2 eggs, lightly beaten
1/3 cup liquid (milk or tomato Juice)
1 cup peas
1 cup thinly sliced carrots
2-1/2 cups mashed potatoes (quite dry)
3/4 cup catsup
flour

Combine all ingredients except potatoes. catsup and flour. (Reserve 1 tbsp. of beaten eggs for brushing potato frosting). Pack in medium sized baking pan. Bake In moderate oven for 1-1/2 hrs. Make sauce by thickening liquid from loaf (or use meat drippings or bacon fat) with 2 tbsps. flour blended with cold water for every cup of liquid. Stir In catchup. Unmold meat loaf on baking sheet, frost with mashed potatoes. Brush with beaten egg and brown in very hot oven (450 F.).
