Sweet Potato Custard Pie
2 cups mashed cooked sweet potato
1 cup milk
2 eggs
1 tbsp. melted butter
3/4 cup sugar
1 tsp. grated lemon rind
1 tsp. salt
1/2 tsp. cinnamon
dash of nutmeg
dash of allspice
1/8 tsp. ginger
Pastry
Deal eggs slightly and add other ingredients and place in pie pan which has been lined with plain pastry. Follow same procedure as the pie above. (Cover with meringue ff desired.)
