Sweet Potato Pie
4 tbsp. butter
1/2 cup sugar
3 tbsp. lemon Juice
1 tbsp. lemon rind
3 eggs, separated
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 cups mashed sweet potato
1 cup evaporated milk
1 unbaked pastry shell
Cream butter and sugar, add lemon and rind. Add beaten egg yolks, spices, potatoes and milk. Mix thoroughly and fold in stiffly beaten egg whites. Pour into pastry shell: Bake at 425 F. for 10 minutes, reduce heat to 350 F. and bake for 5 minutes, or until a knife inserted into the center of the filling comes out clean.
