Inari Sushi

 

(Cone Sushi)

3 dried mushrooms

6 aburage*

3 cups water

1/3 cup soy sauce

3 tbsp. sugar

1 tsp. salt

1/4 tsp. monosodium glutamate

2/3 cup finely chopped carrots

2/3 cup finely chopped green beans

4 cups Easy Sushi Rice

Soak mushrooms in warm water. Cut each aburage to form two triangles. Remove soft inner portion of each; discard. Cover aburage cones with 2 cups of the water and simmer 15 minutes; drain. Combine remaining water, soy sauce, sugar, salt, and monosodium glutamate. Pour over cones and simmer 10 minutes. Drain, saving soy sauce mixture. Finely chop mushrooms; cook with carrots and beans in soy sauce mixture for 15 minutes or until tender; drain. Fold vegetables into freshly cooked sushi rice; loosely pack into cones. Makes 12 servings.
