Sweet Bread
5 lbs. flour
3 1/2 c . sugar
2 stick butter or margarine, melted
1 lg. can Carnation milk
2 tbsp. vanilla
2 tsp. salt
1-1/2 c. raisins (opt.)
3 pkgs. yeast
12 eggs (beaten)
1 c. water
1/4 tsp. salt
2 tsp. sugar
sm. potato, grated & cooked
Prepare potato yeast. Grate small potato, boil with 1 water. Cool; when warm, mash 3 cakes of dry yeast into the potato mixture. Add 2 tsp. sugar and the 1/4 tsp. salt. Set aside to rise for 15 or 20 minutes.
In a pan, add sugar, beaten eggs. Warm the milk with the melted butter. Add vanilla. You may add a teaspoon of lemon extract if to the mixture. Mix and Mine erred preferred. Add yeast, then flour and salt knead until dough is shiny. You may need a little more milk, so add and continue to knead. Add raisins. Set to rise until double in bulk.
Punch dough down. Set, rise again. Shape into loaves and place in greased loaf pans. Brush with beaten egg or milk for shiny surface. Let rise again. Bake in oven for 45 minutes at 325 degrees.
