Sweet-Sour Pig’s Knuckles
1 pr. pigs' feet (chopped)
1 tsp. dau see (salted black beans)
1 clove of garlic (crushed)
1 tbsp. red thick shoyu
2 tbsp. plain shoyu
2 cups brown vinegar
2 pieces ginger
1 cup sugar
Scrape pig's feet clean. Parboil for a few minutes and drain. Wash and mash "dau see" with garlic. Stir-fry dau-see and garlic in tbsp. oil for 5 seconds.
Add pig's feet and stir-fry for 3 mintues.
Add red thick shoyu and mix well. Then add plain shoyu.
Add 1/3 cup vinegar and simmer until almost dry. Add ginger.
Add another 1/3 cup vinegar and simmer until almost dry.
Continue adding vinegar until the 2 cups have been used up.
Add sugar when 1 cup of vinegar has been used. Take care that it doesn’t burn. Stir often. Cook until very tender. Taste before serving.
