Ham Loaf With Glazed Pineapple
"Cut the meat in squares, take to the table in the baking dish. Each square has a pineapple cap" --
1-1/2 lbs. ground smoked ham
1 lb. ground pork
3/4 cup day-old bread crumbs
1/3 cup chopped onion
2 beaten eggs
1 cup milk
6 pineapple halves
1/4 cup butter or fortified margarine
1/4 cup brown sugar
Combine ingredients; mix thoroughly. Pack in 8-by-12 inch baking pan. Bake in moderate oven (350°) 1-1/4 hours. At the end of 1 hour arrange pineapple halves on meat. Melt butter, add sugar and blend. Spoon over pineapples. Return to oven. Continue baking 15 minutes. Cut in squares.
