Prune Cake De Luxe

How can you NOT try a cake with “De Luxe” in its name? There is no shortage of prune cake recipes in the Hawai'i cookbooks of this era and figuring out why may be a whole anthropological study in itself, but what I can say is that this cake is delicious! It is fluffy and moist and the tender bits of chopped cooked prunes throughout add some very delightful texture.

To cook the prunes, just boil the dried prunes for about 10 minutes. They’ll soften and puff up a bit as they soak up water.

I halved the recipe to make just one layer and topped it with some vanilla buttercream frosting.
