9 cups water
1/4 cup dried shrimp
1 piece (5 inches) Dashi Konbu
2 small pork bones
1/4 tsp. monosodium glutamate
1/8 tsp. pepper
1 tsp. soy sauce
1-1/2 tsp. salt
2 pkg. (7 oz each) saimin noodles
1/2 lb. char siu or kamaboko*
1/2 cup chopped green onions
In saucepan combine water, shrimp, knobu, bones, monosodium glutamate, pepper, soy sauce, and salt to make soup stock. Simmer for 30 minutes; strain. Cook noodles according to package directions. Cut char siu or kamaboko into thin strips. Place noodles in warm soup bowls. Pour stock over noodles; sprinkle with green onions and strips of char siu or kamaboko. Makes 6 servings.
