Lemon Filling #2

 

1 cup sugar
2-1/2 tbsp. flour
Grated rind 2 lemons
1/4 cup lemon juice
1 egg, slightly beaten
1 tsp. butter

Mix sugar and flour, add lemon rind and juice, and egg. Melt butter in pan, add mixture, and cook until boiling point is reached. Stir constantly so that mixture will not stick to pan. Cool.
