Chinese Almond Cookies
3 cups flour
1 cup shortening
1 cup sugar
1 tsp. baking powder
1/4 tsp. salt
1 egg
2 tsp. almond extract
Cut the shortening into dry ingredients. Add beaten egg and almond extract. Mix, knead until soft. Form into little balls, flatten with hand into cookies about the size of a quarter. Place on baking sheet. Make an indent in the center of each cookies and place almond on it. If almonds are not available color dent with red coloring. Bake at 350 F for 10 - 15 minutes.
