Coconut Candy

 

3 cups sugar
2 tbsp. syrup
3/4 cup water
1 tsp. vinegar
3 cups fresh coconut (pressed tightly Into cup)
1 tsp. vanilla

Boil sugar; syrup, and water until mixture forms a soft ball when dropped into cold water. Add coconut and boil about 10 minutes more, stirring occasionally to prevent burning. Remove from stove, add vinegar, and beat until smooth and creamy. Add vanilla and drop by spoonfuls on waxed paper or on an oiled platter.
