Oatmeal Griddlecake

 

2 cups milk
2 cups quick cooking oatmeal
1/3 cup sifted flour
2-1/2 tsp. baking powder
1 tsp. salt
2 eggs, separated
1/3 cup oil

Heat milk and pour it over the oats. Allow to cool. Sift flour, baking powder and salt. Beat egg yolks and add to oats mixture. Add oil and stir in dry ingredients. Fold in stiffly beaten egg whites. Drop the batter by spoonful on bot greased griddle, when the surface is covered with bubbles, turn and brown on other side. Oatmeal griddle cakes takes longer to brown than plain ones.
