Plain Rolls

 

Scald - 3/4 cup milk

Stir in - 1/4 cup sugar

2-1/4 tsp. salt

4-1/2 tbsp. shortening

Cool to lukewarm.
Measure into bowl -- 3/4 cup warm (not hot) water.
Sprinkle or crumble in -- 1 package or cake yeast.
Stir until dissolved. Stir in lukewarm milk mixture.
Add -- 2-1/4 cups sifted enriched flour.
Beat until smooth.
Stir in additional -- 2-1/4 cups sifted enriched flour (about).
Turn out on lightly floured board. Knead until smooth and elastic.
Place in greased bowl; brush with shortening.
Cover. Let rise in warm place, free from draft. until doubled in bulk, about 1 hour.
Punch down and turn out on lightly floured board.
Form into desired shape rolls.
