Simple Cucumber Namasu

 

6 medium cucumbers (sliced thin)
2 tbsp. salt
1/2 small carrot (grated)
3/4 cup sugar
3/4 cup vinegar mixed well
1/4 tsp. adjinomoto
1 small can seasoned baby clam (optional)

Wash cucumbers well and peel greens partially leaving strips in sections. Cut stem end about 1 or 1-1/4" and put salt and rub so you can get the bitterness off and wash it. Slice your cucumbers thin and sprinkle 2 tbsp. salt and leave for 1 hour or more. Squeeze the soaked cucumbers with a clean cheese cloth. Mix rest of the ingredients in a separate bowl and add the cucumber. Store In jars and refrigerate.
