Codfish in Green Sauce (Bacalhau com Molho Verde)

 

1 1-1b. box shredded codfish

3 cloves garlic, chopped

4 large potatoes

1/2 cup vinegar

3 large tomatoes, sliced

1 cup salad oil

1 large onion, sliced

black ground pepper

1 large bell pepper, sliced

Boil codfish and potatoes until potatoes are half done, about 15 minutes. Drain codfish and potatoes. Flake cod and slice potatoes about 1/2” thick. Place in layers in casserole starting with the codfish, potatoes. onions, tomatoes and green peppers. Sprinkle top of casserole with the garlic then sprinkle with the black pepper. Mix vinegar and oil and pour over casserole. Bake in a low oven about 250 F for about 45 minutes or until potatoes are done. Serves 6.
