Chinese Chicken Salad

  • 1 or 2 chicken breast (Boil in water with salt, cool and shred)
  • 1 bundle – 2 oz. Chinese long rice (Deep fry long rice until brown)
  • 1 head – lettuce – shredded
  • 4 stalks – green onions – chopped
  • 2 tbsp. toasted almonds – chopped
  • 2 tbsp. toasted sesame seed

Dressing:

  • 2 tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. MSG
  • ½ tsp. pepper
  • ¼ cup salad oil
  • 3 tbsp. white vinegar
  • 1 tbsp. sesame oil

Combine all ingredients in jar. Shake well. Refrigerate. Combine all salad ingredients. Add dressing and toss lightly. Serve immediately.
