Mango Seeds 1

 

1 gal. dried mango seeds
4 cups brown sugar
1/2 tsp. five spice
1 tbsp. thick shoyu
2 tbsp. molasses
2 tbsp. lemon juice
red coloring

Peel and cut mangoes in half. Salt overnight (1/2 cup salt to 1 gal. mangoes). Wash and dry 4 days or more. Fruit will last longer if dried well. Wash dried mangoes good before boiling. Boil water and add the red coloring and mangoes. Boil for 20 minutes or until soft. Drain in strainer.
Put in a large pot and add five spices, brown sugar, thick shoyu, molasses, lemon juice and boiled mango seeds. Cook for 15 minutes or until thick, stirring constantly.
