Light Fruit Cake

 

2 cups sugar
3/4 lb. butter
8 eggs
4 cups flour
2 tsp. nutmeg
1/2 tsp. soda in 2 tbsp.
hot water
1 box raisins (light)
2 boxes fruit mix
1 box dates
1/2 cup sherry wine
rind of 1 lemon
1 cup broken walnuts

Cream butter and sugar. Add eggs. 2 at a time. Sift flour and nutmeg and add to the creamed ingredients. Add soda mixture, fruits and nuts and the rind. Pour wine in and mix well. Pour in paper lined pan and bake in 250 F oven. 1-1/2 hours for loaf pan - 3-1/2 hours for tube pan.
