Spanish Rice

 

4 slices bacon
1/4 cup chopped onion
1/4 cup chopped green pepper
1 11-oz. Cream of Tomato Soup
2/3 cup water
2-1/2 cups cooked rice
1 tsp. salt
1/2 tsp. pepper

Fry bacon until crisp; remove from skillet and chop. Saute’ onion and green pepper in bacon drippings until onion is tender. Add remaining ingredients and bacon. Bake in greased casserole in a moderate oven 350 F. for 30 minutes. Serves 6 to 8. If desired 1/4 cup grated cheese may be sprinkled over top.
