Portuguese Malasadas

 

1 pkg. yeast dissolved with 1-1/3 c. warm water plus 1 tsp. sugar

2 lbs. flour

1/3 c. sugar

1 tsp. salt

1-1/3 c. evaporated milk

1-1/3 c. warm water

1/3 c. butter, melted

8 eggs, slightly beaten

Dissolve yeast and let stand until other ingredients are mixed. Measure flour, sugar, salt in large bowl. Mix evaporated milk and butter together and add dry ingredients, and melted butter and beaten eggs. Add dissolved yeast, stir and mix well to form a soft dough. Cover and place in a warm place. Let it stand until double in size (about 1-1/2 hours). Drop by spoonfuls or with fingers in deep hot oil, frying until light brown. Remove and drain on rack of absorbent paper.
