Haupia (or Coconut Pudding)

 

3 cups coconut milk
1/2 cup cornstarch
1/2 cup sugar
1/4 tsp. salt

Add water to grated coconut until the coconut is just covered. Stir the mass few minutes and strain. Measure coconut milk into a pot. Add sugar, cornstarch and salt and stir until the cornstarch is dissolved. Cook on medium heat, stirring constantly until it bolls. When it starts to thicken use low heat. Pour into a shallow pan and let it cool.
