Mango Sherbet
2-1/2 cups sugar
3/4 cup water
2 cups thick, unsweetened mango sauce
1/3 or 1/2 cup lemon or lime juice
3 cups milk
1 egg white
Dissolve sugar in water by bringing to the boiling point. Cool syrup and add to fruit and milk. Pour into freezing container and freeze. When partially frozen, beat egg white until stiff, add 1/2 cup sugar and beat until sugar is dissolved. Fold into mango mixture and continue stirring every half hour until frozen.
