COCONUT CANDY

3 cups sugar

3 cups fresh coconut (pressed tightly into cup)

2 tbsp. syrup

3/4 cup water

1 tsp. vanilla

1 tsp. vinegar

Boil sugar, syrup, and water until mixture forms a soft ball when dropped into cold water. Add coconut and boil about 10 minutes more, stirring constantly to prevent burnings Remove from stove, add. vinegar, and beat until smooth and creamy. Add vanilla and drop by spoonfuls on waxed paper or on an oiled platter.
