Chili Con Carne
2 tablespoons Fat
1 cup Onions, chopped
1 cup Green Pepper, chopped
1 Garlic, minced (optional)
1 pound Ground Beef
2-1/2 cups Tomatoes (No. 2 can)
2-1/2 cups Kidney Beans (No. 2 can)
1 teaspoon Chili Powder
2 teaspoons Salt
Melt fat in a heavy frying pan. Add onions, green pepper and garlic and saute about 5 minutes on medium heat. Add remaining ingredients. Cover and turn to high heat. When mixture is steaming, reduce heat and simmer gently for about an hour.
If not thick enough, simmer for 15 minutes uncovered on medium heat.
