Carrot-Lemon Dressing

 

1/4 cup sugar
1/4 cup water
1 cup grated carrot
Grated rind and Juice of 1 lemon

Boil the sugar and water together to make a syrup. Cool. Grate carrot and lemon rind, squeeze lemon juice, and combine the three. Add syrup to the carrot-lemon mixture. Chill. Serve on either fruit or vegetable salad.
