Springtime Lime Salad

 

Dissolve 1 pkge. lime Jello in 3/4 cup boiling water. Cool slightly then stir in 1 cup evaporated milk. Chill until as thick as unbeaten egg whites. Fold in the following ingredients:

9-oz. can crushed pineapple (do not drain)
1 tbsp. lemon Juice
1 cup creamed cottage cheese
1/2 cup broken nuts (optional)
1/2 cup finely cut celery
1/2 cup mayonnaise or salad dressing

Pour into an 8-inch square or a mold holding about 5 cups. Cut into squares or slice and serve on lettuce. Serves 4 for 2 meals.
