Old Fashioned Doughnuts or Portuguese Sweetbread
5 lbs flour
1 c butter
2 c sugar
14 egg yolks
About 1 qt milk
Pinch of salt
Yeast: Grate 1 med. potato, boil with little water, cool off. When warm, mash one cake of yeast together, add 1 handful of sugar, pinch of salt and let rise 15 to 20 minutes.
To flour, add sugar, butter, eggs and yeast. Add a little milk and start kneading. As dough gets hard, add milk and knead again, For doughnuts, pound till soft, for sweetbread, have dough a little harder. The more you knead the better. Let rise. Knead back and let rise again. Shape and place on banana leaf on greased pan, brush with milk or beaten egg for shiny surface and let rise. Bake in oven 325 F for 1 hour. For doughnuts, shape, let rise and fry in hot fat. Do not use oil as it has a tendency to smell.
