Sweet Bread (Pao Duce)
1 cup milk (about) scalded
2 pkgs. or cakes yeast
1-1/4 cup lukewarm water
14 cups flour
2 tsp. salt
3 cup sugar
3 tbsp. butter
10 eggs, slightly beaten
grated lemon rind (l lemon)
1/2 tsp. lemon extract
1 egg (for brushing top)
1. Scald milk
2. Dissolve yeast in lukewarm water
3. Sift flour and measure
4. Sift flour, salt and sugar
5. Add butter and stir
6. Add eggs, lemon rind, extract and yeast and mix well
7. Pound or knead dough for 20 minutes, gradually adding milk as needed (dampening hand with milk). Knead until no dough sticks lo hands.
8. Let rise in pan until doubled in bulk.
9. Pound down, then shape into greased pan.
10. Let rise until doubled in bulk.
11. Brush top with whole egg, beaten well.
12. Bake at 350° for 1 hour for bread and 20 minutes for rolls.
