Portuguese White Bread
Makes 2 loaves
1 cup water or milk
3 tbsp. sugar
2-1/2 tsp. salt
6 tbsp. shortening
1 cup warm water
1 pkg. or cake yeast
6 cup flour (about)
Method:
1. Heat water or milk
2. Stir in sugar, salt, and shortening
3. Cool to lukewarm
4. Measure into bowl 1 cup warm water and sprinkle or crumble in the yeast, stirring until dissolved.
5. Stir in lukewarm sugar mixture
6. Add 3 cups flour and beat until smooth.
7. Stir in additional 3 cups flour.
8. Turn dough out on lightly floured board.
9. Knead until smooth and elastic.
10. Place in greased bowl; brush top with soft shortening.
11. Cover. Let rice in warm place, free from draft, until doubled in bulk (about 1 hour).
12. Punch down and turn out on lightly floured board.
13. Divide in half, let rise 15 to 20 minutes.
14. Form each half into smooth ball
15. Place in greased pan.
16. Cover. Let rise in warm place, free from draft until doubled in bulk ( about 1 hour).
17. Bake in bot oven at 400° F. about 50 minutes.
NOTE: For 1 loaf use 1 package or cake yeast and 1/2 of all other ingredients; bowl rise about 30 minutes, pan rise about 45 minutes.
