Orange Cake
2-1/2 cups cake flour
4-1/2 tsp. baking powder
3/4 cup shortening
3/4 tsp. salt
1-1/2 cups sugar
3 eggs
1 cup milk
1 tsp. vanilla extract
1 tbsp. grated orange rind
Sift flour, baking powder and salt together. Blend shortening and orange rind. Add sugar gradually creaming until light and fluffy. Add eggs one at a time, beat about one minute after each addition. Add dry ingredients alternately with milk and flavoring. Pour into well greased cake pan. Bake in moderate oven 350 F for 25 to 30 minutes.
